Don’t really post as much here sorry ! There are quite a few recipes on my Pinterest , including an “ I tried” section. Hope to catch you there . Also post of the Facebook page more so than here. https://www.facebook.com/recipecollective

And just for good measure, here IS a recipe I made recently.  VERY good& hubby approved! ๐Ÿ‘๐Ÿ‘๐Ÿ‘ I didn’t have full fat yogurt but I did have it in sour cream so I did half sour cream half yogurt. I also had 1lb of precooked beef and 1lb sausage ; dumped all 2 lbs in ☺️.  Added some fresh chopped basil and oregano that I grow. ๐Ÿค— I still added in a dose of dried Italian seasoning too. It all worked ! This may seem like labor intensive but it’s really not bad. Very delicious!!!

Cheese and Cracker bites

Spicy Cheese & Cracker Bites
Taken from a Rachael Ray Magazine..and then just did my own thing with it.

In a bowl, mix 4 oz. softened goat cheese,
2 oz. softened cream cheese
and 2 tbsp. grated Parmesan.
Stir in 1⁄4 cup crushed *Triscuit crackers
**  and 3 tbsp. seeded, minced jalapeño.

Chill mixture until firm, about 30 minutes. Roll into 1⁄2 -inch balls; coat with 1⁄2 cup crushed crackers and 1⁄4 cup chopped parsley. Makes 30.

*  I used Herb Triscuits- they were very tasty!
* * I do NOT like spicy so I used fresh red pepper chopped fine and mixed that in. It worked VERY well

Cranberry cilantro lime salsa

Cranberry lime salsa

Ingredients:
1 bag (12 oz.) fresh cranberries
3/4 cup Splenda, Stevia In the Raw Granulated, or sugar (use Splenda or Stevia for South Beach Diet)
1 bunch green onions, sliced (about 3/4 cup sliced green onion)
1 bunch fresh cilantro, chopped (about 3/4 cup chopped cilantro, or use more to taste)
2 fresh jalapenos, seeds removed and chopped  
(use more if you like it spicy; could also use a few tsp. of Green Tabasco Sauce)
1 T olive oil
1 T fresh lime juice (I used my fresh-frozen lime juice)

Instructions:
Chop the green onions and cilantro.  Then WEAR RUBBER GLOVES for chopping the jalapenos, being careful not to touch your face or eyes or let the juice squirt up.  (I don't put jalapeno seeds into the disposal either, because the fumes when they are grinding can irritate your eyes.  If you're worried about handling the jalapenos, I've had good luck making this with Green Tabasco Sauce.)

Put the cranberries into a food processor or blender and pulse until they are partly chopped.  Add sweetener of your choice and pulse a few times more to combine.  Add sliced green onions, chopped cilantro, chopped jalapenos (or Green Tabasco Sauce), olive oil, and lime juice and pulse until all ingredients are chopped and the mixture is well combined.  (If you're not sure about using 2 jalapenos, add one and taste the mixture before you add the other, but I'm kind of a lightweight on spicy things and this was just right for me.)

Put mixture into a glass or plastic container with a tight-fitting lid and chill for several hours or overnight.

Cranberry Salsa Recipe
Prep time: 15 minutes
Yield: Just over one cup of salsa

Roughly chopped ingredients to place in a food processor. If you don't have a food processor, grate the ginger, and finely chop or mince the cranberries, apple, chile, green onions, and cilantro.

Ingredients
1 1/2 cups of fresh or frozen cranberries
1/2 an apple, peeled, cored, roughly chopped
1/2 jalapeรฑo, seeds removed, roughly chopped (less or more to taste, depending on how hot the chile is and how hot you would like your salsa to be)
2 green onions (scallions), chopped, including light green parts (about 1/4 cup)
4 Tbsp sugar
2 Tbsp chopped fresh cilantro
1 Tbsp peeled chopped ginger
1 Tbsp lime or lemon juice
Dash of salt

Instructions
1 Place the cranberries, apple, chile, green onions, sugar, cilantro, ginger, lime juice and salt (all of the ingredients) in the bowl of a food processor. Pulse several times until everything is finely chopped and well blended.

2 Let salsa sit at least 15 minutes for sugar to soften the chopped cranberries. Store chilled in an airtight container until ready to serve. 
This makes a great side to pork, chicken, turkey, or steak. You can also place a dollop over a cracker spread with cream cheese for an appetizer.


*** My notes: I didn't like the first recipe alone- so I continued on ,combing the two by adding the apple. For the ginger , I actually used candied ginger. It worked well. I would suggest some red onion as well, maybe 1/4 cup. Next time I may even add some red pepper.     

Egg nog Meltaways

Ingredients:
1 3/4 cups all purpose flour
1/2 cup cornstarch
1/4 tsp salt
1/4 cup powdered sugar
1 cup butter, softened
1/4 cup eggnog
1 cup powdered sugar for rolling the cookies

1. Mix together the flour, cornstarch, and salt in a medium bowl and set aside.
2. Cream together the butter and sugar.  Beat in the eggnog.
3. Add the flour mixture gradually until well combines.  Cover and refrigerate for an hour or until the dough is firm.
4. Preheat the oven to 350 and line two baking sheets with parchment paper.
5. Roll the dough into 1 inch balls and place on the baking sheet about 1 inch apart.
6. Bake 12-14 minutes.  Remove to a wire rack and cool for about 5 minutes and then roll them in powdered sugar.  Makes about 3 dozen.

**************** MY NOTES : These came out bland and I could not taste egg nog in them at all. In an attempt to salvage them I mix in a tsp of rum extract. 1/2 tsp some nutmeg, and about 1/4 tsp cinnamon. Also rolled them in a mix of the powdered sugar with some nutmeg mixed in and about a good tablespoon of cinnamon mixed in with the powdered sugar. That definitely helped but I'm still not impressed with these at all!!! 

Ny Cheescake cookies

Ingredients
1 1/4 cups finely crushed graham crackers (1 sleeve)
1 cup flour
1 1/2 teaspoons baking powder
1 stick (8 tablespoons) unsalted butter, softened
1/2 cup packed brown sugar
1 egg, separated
3 ounces cream cheese, softened
1/4 cup granulated sugar
2 teaspoons lemon zest
1/2 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F.

In a large bowl, stir together the graham cracker crumbs, flour and baking powder. In a medium bowl, beat together the butter with the brown sugar using an electric hand mixer. Add the egg white and beat until well combined. Add to the graham cracker crumbs and blend until just combined.

In a separate medium bowl, beat together the softened cream cheese with the granulated sugar, egg yolk, lemon zest and vanilla until well combined. Set aside.

Using a small ice cream scoop, scoop out the cookie dough and place on a nonstick or parchment lined baking sheet. (If you do not have an ice scoop, then measure out the dough into scoops of about 2 tablespoons.) Flatten slightly, pressing your thumb in the center of the ball to create a small bowl shape. Repeat with the remaining dough. Spoon the cream cheese into the indents in the cookies.

Bake until the filling is barely set and the cookies are lightly golden, 12 minutes. Allow to cool 5 minutes on the baking sheets before removing them and cooling completely on a wire rack.

*****MY NOTES:It seemed there was too much grahm cracker and not enough cheesecake.They are very tasty though. Also I would double the recipe next time. I'm thinking of trying them in mini muffin tins so the graham could come out more like a "cup" instead of a thick chunky cookie. Will need to probably triple the cheese mix if I do this-check back and I'll let you know how it goes

1+1/4 cup soft butter (2 and 1/2 sticks room temperature butter)
1 cup sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
3 1/4 cups flour
4 packages Hot Chocolate Mix or 3/4 cup (not sugar free)
1 teaspoon salt
1 1/4 teaspoon baking soda
1 teaspoon baking powder
1 cup chocolate chips
1 cup Marshmallow Bits (you could substitute mini marshmallows)
Instructions

Preheat oven to 350 degrees F.


Beat butter and sugars in large bowl with standing mixer until light and fluffy. Add eggs and vanilla; mix well.


In a separate bowl, mix together your dry ingredients, including your hot chocolate packets.


Add the dry ingredients a little at a time to your wet ingredients. I found that my dough was very dry – as in I had to almost knead it by hand to work in the chocolate chips and marshmallow bits.cover and chill 1 hour. 


Drop 2tbs 2 inches apart on to cookie sheets.The dough was dry, but the end result was fabulous.


Bake in an oven preheated to 350 degrees for 9-11 minutes. Allow to cool for approximately five minutes then remove from cookie sheet. Enjoy!!!


**My notes: Had to cook my the full 11 minutes otherwise they were underbaked- that may be because mine were in the frig for over 1 & 1/2 hours !?

Goat Cheese / Gorgonzola Truffles

4 ounces cream cheese, softened 
1 (4-oz.) container crumbled Gorgonzola cheese or Goat Cheese
2 teaspoons finely chopped onion 
1/2 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1/2 cup cooked and crumbled bacon 

Apple and pear slices
Grapes]

Preparation

1. Beat first 5 ingredients at medium speed with an electric mixer until well combined. Cover tightly, and chill at least 1 hour or until firm (can chill up to 3 days).

2. Roll cheese mixture into 3/4-inch-round balls. Roll each ball in bacon. Serve immediately, or cover and chill until ready to serve. If chilled, let stand 30 minutes before serving. Serve with apple and pear slices and grapes.


*NOTE I have made these then skewered them with a green grape on toothpicks for an appetizer. It went really well with wine tasting too!

FRIED" HONEY BANANAS

FRIED" HONEY BANANAS...Great dessert without the guilt!
Serves 1
1 slightly under-ripened banana, sliced
1 tablespoon honey
Cinnamon
Olive oil

Lightly drizzle olive oil in a skillet over medium heat. Arrange banana slices in pan and cook for 1-2 minutes on each side.
Meanwhile, whisk together honey and 1 tablespoon of water. Remove pan from heat and pour honey mixture over banana.
Allow to cool and sprinkle with cinnamon.



NOTE** I tried it- it was a mushy mess. Not as pretty as the picture I saw. It tasted ok, but I 'd call this a major fail and probably won't be doing it again!

Strawberry whipped sensation.

Thought I had this recipe in here but couldn't find it. A friend asked me to make it a while back. It was a great success and every year she asks me to make it when she comes for Easter dinner. The original was a recipe taken from a magazine.

Strawberry Whipped Sensation recipe
time = prep:20 min total:6 hr 20 min
servings total: 12 servings
what you need
4 cups  fresh strawberries, divided
1 can  (14 oz.) sweetened condensed milk
1/4 cup  lemon juice
1 tub  (8 oz.) COOL WHIP Whipped Topping, thawed, divided
8  OREO Cookies, finely chopped
1 Tbsp.  butter, melted make it

LINE 9x5-inch loaf pan with foil, with ends of foil extending over sides. Mash 2 cups berries in large bowl. Add milk, juice and 2 cups COOL WHIP; mix well. Pour into prepared pan.

MIX chopped cookies and butter; spoon over COOL WHIP mixture. Cover with ends of foil; gently press cookie mixture into COOL WHIP mixture. Freeze 6 hours or until firm.

INVERT dessert onto plate when ready to serve; remove pan and foil. Frost dessert with remaining COOL WHIP. Slice remaining berries; arrange over dessert.

Cherry Vanilla Ribbon pie

from eagle brand sweetened condensed milk;

aprox 10 servings. prep time 20 minutes no cooking.

ingredients:
1 8oz cream cheese
1 (14 oz) can  sweetened condensed milk
1/4 cup cold water
1 (4 serving size) package instant vanilla pudding
1 cup (1/2 pint) heavy cream- whip!
1 (21 oz) can of fruit pie filling - recipe calls for cherry.
* have also made it with strawberry... going to try blueberry  next time
1  9 or 10 inch pie crust


I used a 9 inch graham cracker pre-bought crust and also a shortbread one. both were fine.
you can also use a one shell baked pie crust and fill it.

instructions:
In large bowl, Beat cream cheese with electric mixer until fluffy. Gradually beat in sweetened condensed milk until smooth. Beat in water and pudding mix on low speed until smooth. Chill 10 minutes . fold in whipped cream. spread half the pudding mix in pie crust. top with half of the fruit pie filling. them top with remaining pudding mixture. Chill about 2 hours to set. Garnish as desired with remaining pie filling before serving.

VERY yummy!!!! heavenly even...

kool-aid cookies

Adapted from joanne fluke "apple turnover murder"
DROP cookies

preheat oven 325 degrees.depending on size, makes about 6 dozen cookies

ingredients:
1 package (aprox .16 oz) of kool-aid, the unsweetened kind - * any flavor
1 2/3 cups sugar
1 1/4 cup softened butter (2 1/2 sticks)
2 large eggs slightly beaten
1/2 teaspoon salt
1 teaspoon baking soda
3 cups all-purpose flour (pack it down in cup when measuring)
1/2 cup white surge in bowl for rolling dough in

to make:
mix the kool-aid with the sugar. add softened butter and mix until fluffy.
add eggs and mix well.
mix in salt and baking soda until well incorporated.
Add flour in 1/2 cup increments mixing well after each addition.

prepare cookie sheet with non-stick spray or parchment paper
 With hands, roll dough into balls aprox, 1 inch in diameter
roll cookie dough ball in white sugar and place on cookie sheet.
bake 325 for 10-12 minutes... or until they just start to turn golden around the edges.
dont' over bake!
let cookies cool on sheet for about 1 minute then remove to wire tack to cool.

*NOTES: Black cherry makes the best flavor cookies )watermelon is also a favorite.
Peach-mango was different..not too bad ,
also did a lemon-berry(think it was blueberry?) they went over well at a tea part.
we're not fans of grape in this house but they'd probably be good too.

Desert dips with cream cheese


Chocolate chip cookie dough dip

1(8oz) package cream cheese, softened
1/2 cup butter, softened
3/4 cup confection/powder sugar
2 tablespoons brown sugar
1 tsp vanilla extract
1 cup milk chocolate chips

Beat together cream cheese, butter, confectioners' sugar, brown sugar and vanilla in a bowl.
Stir in chocolate chips.
Refrigerate until ready to serve.

Monster Cookie Dough Dip

1 (8 ounce) package cream cheese, softened
½ cup butter, slightly softened 
1 cup creamy peanut butter 
2 cups powdered sugar 
3 Tablespoons brown sugar
1/4 cup all-purpose flour
1 teaspoon vanilla 
2 ½ cups rolled oats, old fashioned or quick (see Note)
2/3 cup plain M&Ms (give or take)
1 cup semi-sweet chocolate chips
Instructions:
1. With a hand mixer or stand mixer, beat the cream cheese, butter, and peanut butter until smooth. 
2. Add in the powdered sugar, brown sugar, flour, and vanilla.
3. Using the paddle attachment on your stand mixer or just a wooden spoon, mix in the oats. You may want to use more or less here. I really like the oats in it and a thicker dip so I added a lot. Remember that the dip will also firm up a bit in the fridge.
4. Add the M&Ms and chocolate chips.
5. Store in the refrigerator until serving. Serve with pretzels, graham crackers, or apple slices. You can dip or spread this depending on how thick you made your dip. Try not to eat it all like I did!
6. Note: You can use more or less oats to adjust the thickness of your dip. Start with about 1 1/2 cups oats and keep adding until you reach your desired thickness. If you use quick oats you might use less since it’s finer and will make the dough thicker.

Red velvet Cake batter dip
(works with chocolate cake batter too-see below)

8 oz. cream cheese, softened
1/2 c. butter, softened
2 c. red velvet cake mix
2 c. powdered sugar
3-4 tbsp. milk
Instructions:
In a stand mixer, whisk together the cream cheese and butter until smooth.
Whisk in the red velvet cake mix, 1 cup at a time. Add 1-2 tbsp. of milk alternately, if necessary, to keep consistency smooth.
Whisk in the powdered sugar, 1 cup at a time, alternately with tablespoons of milk. Continue adding powdered sugar and milk until it reaches a consistency and a sweetness that you like.

Chocolate cake batter dip

8 ounces cream cheese, softened
½ cup butter, softened
2 cups Devil’s Food Cake Batter (the mix)
4-6 Tablespoons milk, depending on desired consistency
2 cups powdered sugar

For the pie crust dippers
1 refrigerated pie crust, from a pack of 2
1 tablespoon melted butter
Sugar, for sprinkling

Instructions
For the dip
Beat cream cheese and butter until fluffy. Add cake batter and 3 tablespoons of milk and mix until well combined.
Slowly add 2 cups of powdered sugar, mixing well. Add an additional 2-4 tablespoons of milk, depending on how thick you want your dip. Taste and add more powdered sugar if you want it sweeter (if you add more sugar, you may need more milk.)
For the dippers
Unroll pie crust and cut out desired shapes. Re-roll once or twice as needed. Place cutouts on a parchment lined baking sheet. Brush with melted butter and sprinkle with a pinch of sugar.
Bake 350° for 5-7 minutes until golden. Cool completely and use for dipping. (Makes 3 dozen.)
Note: You can also use fruit, graham cracker sticks, or a spoon for serving.

Cake Batter Dip

Ingredients
1/2 cup butter, melted & cooled
1/2 cup powder sugar   
8 oz. cream cheese, softened
1 cup Funfetti cake mix (mix powder, not batter)
1 teaspoon vanilla extract
2 Tablespoons milk
1 - 2 Tablespoons sprinkles
  

Directions
*With an electric hand mixer beat cream cheese, powder sugar and cake mix together until combined.
Add in vanilla, milk, and butter, Mix for about 2 mins until smooth and creamy. (Mixture will be thick)
Pour in bowl and top with sprinkles and refrigerate until chilled. When it first comes out of the fridge it will some what hard giving it a few minutes to come to room temperature helps.
Serve with animal crackers, vanilla wafers, or your favorite cookie

Banana bread dip:

 INGREDIENTS: 8oz Cream Cheese -softened,
 1 cup banana quick bread mix,
1/4 cup butter -softened,
2 tbsp milk,
1 1/2 tsp vanilla, 2tbsp walnuts.

 DIRECTIONS: Mix and beat together the first 5 ingredients. Then fold in half of walnuts into the creamy mixture. Use the remaining walnuts for your topping. Serve with graham crackers, or Nilla wafers. Enjoy!

Eggnog Mini Loaves

From tastes of home magazine - gave these as christmas good- very tasty!
Says it is diabetic friendly - BUT there is sugar in it...maybe it would work well with splenda too..
30 Servings 
Prep: 15 min. Bake: 30 min. + cooling Ingredients 
2-1/4 cups all-purpose flour 
2-1/2 teaspoons baking powder 
1/2 teaspoon salt 
1/2 teaspoon ground cinnamon 
1/2 teaspoon ground nutmeg 
2 eggs 
1 cup eggnog 
3/4 cup sugar 
1/2 cup butter, melted 
2 teaspoons vanilla extract 
2 teaspoons rum extract 
Directions In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. 
In another bowl, beat the eggs, eggnog, sugar, butter and extracts; stir into dry ingredients just until moistened. Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
 Yield: 3 loaves. Editor's Note: This recipe was tested with commercially prepared eggnog. Nutrition Facts: 1 slice equals 105 calories, 4 g fat (2 g saturated fat), 27 mg cholesterol, 106 mg sodium, 15 g carbohydrate, trace fiber, 2 g protein.

*******MY NOTES. This is a nice , sweet but not too sweet quick bread that I make every year for gifts. All my friends and family love it. I’ve also made it boozy by adding about 2 tablespoons of Kahlua  to make 1 cup with the eggnog. I’ve used rum too, a spiced rum and skipped the rum extract.

BLUEBERRY JAM

BLUEBERRY JAM (tastes of home magazine)
Good for diabetics because there is no sugar added

Ingredients
1/3 cup thawed apple juice concentrate
1 envelope plain gelatin
5 cups fresh or frozen blueberries
1 tablespoon lemon juice
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon

Directions
Pour the apple juice concentrate into a saucepan; sprinkle with gelatin and allow to soften for several minutes.
Meanwhile, in a blender or food processor, finely chop blueberries, 1 cup at a time. Add lemon juice, spices and 2 cups of chopped berries to gelatin; heat over medium-low until gelatin is dissolved. Remove from the heat; stir in remaining berries and mix well.
Pour into jars or plastic containers; store in the refrigerator up to three weeks.OR freeze up to one year. Yield: 4 cups.

Gave out as christmas gifts- it went over very well.

green beans , stewed tomates and italian spices

This is a combination of several recipes I found for green beans and stewed tomatoes ,with an italian touch ;) Making it for friends tonight- we'll see if there needs to be any tweaks.

Ingredients


1lb. Fresh Green Beans
or 2 cups of frozen
or 1 can cut green beans (14oz)
2 Tb butter,
or 1 Tb olive oil.( I like butter)
1 small onion, halved and thinly sliced - red onions work nicely too,
or 2 scallions
1 Garlic Cloves, crushed/minced
1 tsp dried Basil
1 Tb dried parsley or 1/4 cup fresh-chopped.
3 ripe medium to large Tomatoes, diced or one can stewed tomatoes(10 or 14oz)
1 Tb balsamic vinegar
1 tsp steak sauce
2 Tb water
salt & pepper to taste ( I do not use salt )
Optional (as seen in other recipes)
1/2 cup chopped celery
1/4 to 1/2 cup chopped pepper green..or yellow for a splash of color:)

1.if fresh green beans - Trim the ends off the beans, cut into 1 1/2 inch lengths.OR drain the can of beans
2.FRESH only->and optional In a large sauce pot cook the beans in lightly salted water for 3 min. Drain the beans and set aside.
3. In a non-stick skillet, heat butter/oil and add onions,(celery and green pepper at this time too) garlic and basil. Cook for 2 min. or until soften
4. Add remaining ingredients, except the beans, and cook for 3 minutes.
5. Add the beans.
6. Cover and cook for an additional 10-15 min. until beans are tender, stirring often. (you can simmer without a lid but may need to add water as it simmers to keep mixture moist.)
7. ENJOY!!!!


Today I am using fresh green beans, vadalia onion and yellow pepper,plus I am skipping step 2 of the process..... I am SURE I will do this again with frozen or canned beans no doubt!

Mini- cheese cakes

I searched through several recipes and each one was slightly different then the others... so this is what I came up with adding different components of other's recipes
.. I've gotten rave reviews on how little a bite packs alot of flavor!!

1 8oz package cream cheese
24 vanilla wafers
1 egg
1/3 cup sugar
1/4 c sour cream
1 tsp vanilla 1/4 tsp almond
1/4 tsp nut meg
1/2 tbs lemon juice


375 for 20-25m -tops get a light golden....

in mini-muffin tin- I used the mini-cup cake papers - place 1 vanilla wafer in the bottom of each cup.
In medium bowl, mix softened cream cheese, sugar and sour cream with beater on low to medium, add egg. Mix well until creamy. Add all other ingredients & mix thoroughly. Spoon cream cheese mix by rounded teaspoon full on top of each vanilla wafer. Should make 24 easily, may have a little extra, go back and fill in if you think a few need a little more.

Bake as directed above until light golden brown on top.

Serve with jelly- I put three different kinds of jelly in small dishes with a spoon for guest to choose which fruit they would like. My fav is red raspberry ( seedless jam!) , Blueberry, and Cherry. Have of course used strawberry too and even spooned apple pie filling & drizzled with caramel- that was a huge hit!!

Pizza Puff

ok..I was sure I had posted this in here before.... these were an easy snack and a hit with visitors for a tasty appetizer.... so I can find it again :(need it for a party!)
compliments of the Rachael Ray magazine....
INGREDIENTS:
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup whole milk
1 egg, lightly beaten
4 ounces mozzarella cheese, shredded (about 1 cup)
4 ounces pepperoni, cut into small cubes (about 1 cup)
1/2 cup store-bought pizza sauce
2 tablespoons finely chopped fresh basil
1 red bell pepper, sliced Frozen Assets
TIP: Freeze the baked puffs in a single layer on a baking sheet, then transfer to a freezer bag. To reheat, bake the frozen puffs on a baking sheet in a 350° oven for 8 to 10 minutes.
DIRECTIONS:
Preheat the oven to 375°. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour and baking powder; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Meanwhile, microwave the pizza sauce until warmed through, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs and red pepper slices with the pizza sauce for dipping.

UPDATE: in the dry ingredients I add dry herbs like Italian seasoning , (or separately I add dried oregano , basil) , garlic powder, onion powder and even a pinch of curry. Anything you’d put on pizza goes ! It adds so much more flavor. I also sprinkle chopped  fresh basil and a little fresh grated Parmesan on top of the muffins BEFORE I put them in the oven. This is the recipe I  get the most requests to make for any party.

Daring cooks' August Challenge reveal

The August 2010 Daring Cooks' Challenge was hosted by LizG of Bits n'Bites and Anula of Anula's Kitchen. They chose to challenge Daring Cooks to make pierogi from scratch and an optional challenge to provide one filling that best represents their locale.

My area is very ethnic and we celebrate our diversity. You'll find an abundance of polish, Italian, Greek , Russian, Pa Dutch/German, and I've even experienced food & culture from friends who's heritage was Ukrainian, Asian , and Lithuanian. Needless to say, Pierogi are quite rampant in these parts and I have made them from scratch many times. I've never had a dessert pierogi though....and I was going to try this, but when I tried to come up with something that represents our locale, all I could think of was pizza - since Old Forge is right next to us and boasts the name of our nation's Pizza Capital, I went for a savory dish instead. I think I'll try the dessert ones next.
The filling came from watching Giada on food network make pizza pockets. I did not hunt down the recipe, instead I just "winged" it. The dough and filling recipe I used will be listed at the bottom.

Thanks again to all the wonderful people behind The Daring Kitchen for making these challenges possible. I am pleased that with each challenge, I do learn something new along the way!

First step- Have the flour and egg ready to make the dough and already have filling, just have to mix it. I chose to make a savory sausage filling mixed with spinach,onion, cream cheese, Parmesan, and of course garlic. The sausage is cooked and then mixed with the cheese. Once the filling is mixed I set it aside and mixed the dough.


Next was the rolling of the dough and filling the pirogi. I bought a dough press set at a yard sale for $1.00 - can't beat that... made it easier to cut the circles and fill the pockets, but I still pressed with the fork in the end so the edges weren't too thick.



Now they were sealed and ready! I cooked them in batches in boiling water... noting of course they were ready when they floated to the top! ;) After they were cooked I put them in a frying pan and sautรฉed them with fresh chopped basil and butter until they had a light golden crisp on the tops and bottom. The picture below shows the final product, served with a tomato gravy. I was thinking some nice chopped and seasoned tomatoes would make a tasty garnish as well....but that was an after thought- they were already eaten before I could try that!

The Recipe:
I would suggest preparing the filling first and then making the dough....

Dough:
2 to 2 1/2 cups flour
1tsp salt
1 egg
1 cup Luke warm water

I started with 2 cups and added more flour as needed depending on consistency of the dough. Put the flour in a large bowl and make a well in the center. Crack the egg in there, add the salt , and a little Luke warm water at a time. Knead the dough adding more flour or water as needed. You want a nice soft dough. From into a ball. Cover the dough and let sit for 20 minutes.

Filling:
1lb bulk sweet or mild Italian sausage
1/2 medium to small onion-chopped
1 clove of garlic chopped fine
1 cup (8oz) spinach fresh or frozen-thawed and drained
4oz cream cheese
1/2 Parmesan cheese
slat and pepper to taste

In bowl add the cream cheese and Parmesan , set aside.
In frying pan, heat the sausage ,onion & garlic until cooked through and meat is no longer pink. Add the spinach and toss until heated through. Add to bowl- heat will melt the cheese- mix all well. Set aside so it cools and will be ready to use as filling.
(NOTE: I had to make to batches of the dough to use up all the filling and all remaining pierogi were frozen for another day!)

On floured surface, roll the dough out to aprox. 1/8 inch think. Cut with 2 inch round cookie cutter, dough press,or round glass. Spoon a portion of filling on the middle of each circle. Fold dough in half, pinch the edges together. Re roll any scraps of dough and repeat.

Bring a pot of salted water to boil. Drop pierogi in batches, not too many at once. Bring to a boil again and reduce heat slightly, wait for the pierogi to rise to the top and let simmer for about 5 minutes - they're finished!

Daring Kitchen July Challenge Reveal.

The July 2010 Daring Cooks' Challenge was hosted by Margie of "More Please" and Natashya of "Living in the Kitchen with Puppies". They chose to challenge Daring Cooks to make their own nut butter from scratch, and use the nut butter in a recipe. Their sources include 'Better with Nut Butter' by Cooking Light Magazine, Asian Noodles by Nina Simonds, and Food Network online.
I chose to try the **Walnut & white bean dip w/ Rosemary & Sage, the **Chicken with Pecan cream & mushroom sauce, and the Asian Noodle-shrimp with Peanut sauce.

I'm so glad to have had the opportunity to learn about nut butters. The most common nut butter we all know is peanut butter. Making your own is so much better then buying. I can't wait to make traditional Italian pignoli cookies at Christmas with my own almond butter too, now that I know how easy it is!! The first Project was the dip. I started with the walnut butter then added the rest of the
ingredients as demonstrated in the following photo.


The Dip was a hit with my family. The finished product is pictured below. I would certainly make this for a party again!


Next is the Chicken with the pecan cream & mushroom sauce. Pecans are my favorite so I was looking forward to this one.The picture below shows the bowl with the pecan butter and the rest of the prep for making the dish.

This following picture is the finished dish. I was disappointed that it was rather bland. One tip: it calls for being served over egg noodles. I ate it that way- MUCH BETTER then served over rice like my husband wanted it. I'm not sure why that made a difference but, it did.

The Asian dish of shrimp with peanut sauce was definitely outside our comfort zone. This seemed really simple to make but did not go well with the family. The picture below is the peanut sauce.


The picture below here is the finished dish. It looks yummy but no one liked it except me. I think maybe it would have been better to try with chicken and ease my husband into it...lol. He is not a big peanut butter fan as it is but he could not stand the combination with shrimp.
Maybe one of you will have better luck then I did..... I think, however, I will revisit this with my good friend who is known for his Asian cooking.....
