Mini Italian Club Sandwiches

Mini Italian Club Sandwiches - from Giada- foodnetwork

Ingredients

* 3 large eggs
* 2 tablespoons whipping cream
* 1/4 teaspoon salt
* 1/8 teaspoon freshly ground black pepper
* 1 tablespoon (about) unsalted butter
* 10 slices bacon
* 2 (8-ounce) round loaves focaccia bread (7-inch diameter)
* 1 cup purchased pesto
* 8 ounces thinly sliced turkey
* 4 ounces thinly sliced provolone cheese

Directions

Whisk the eggs, cream, salt, and pepper in a medium bowl until well blended. Heat a 6-inch-diameter nonstick skillet over medium-low heat. Brush the skillet with some butter. Pour 1/4 cup of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute and 30 seconds. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 4 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.

Cook the bacon in a heavy large frying pan until crisp. Transfer the bacon to paper towels to drain.

Preheat a griddle or grill pan over medium-high heat. Cut the focaccia horizontally in half. Place the focaccia cut side down on the griddle and cook until the focaccia is heated through and golden brown on the bottom, about 2 minutes. Spread the pesto over the toasted sides of each halved focaccia. Cover the bottom halves of the focaccia with the egg crepes, turkey, provolone and bacon, dividing equally. Cover with the top halves of focaccia, pesto side down. Cut the sandwich into bite-size wedges. Arrange the sandwiches on a platter and serve.

Cheesy ham pockets - quick and easy

Cheesy Ham Pockets
2 (10-ounce) cans refrigerated pizza dough
1/2 pound thinly sliced deli ham
8 (3/4-ounce) slices Deli American or Swiss Cheese
1/2 pint (1 cup) creamy deli coleslaw, drained

Heat oven to 425°F. Unroll pizza dough on lightly floured surface; cut dough into quarters.
Press each quarter dough into 7x4 1/2-inch rectangle. Layer 1/8 ham, 1 slice cheese and 2 tablespoons coleslaw to within 1/2 inch of edge on each piece dough. Roll up dough, starting at short side; seal edge and ends well.
Place sandwiches onto greased baking sheet, seam-side down. Bake for 12 to 14 minutes or until golden brown.
Makes 8 sandwiches

Sloppy Joes

Crock Pot Sloppy Joes

3 pounds lean ground beef or turkey
1 large onion; chopped
1 cup chopped green pepper
1 cup chopped celery
4 cloves garlic; chopped fine or put through a garlic press
2 little cans tomato paste
1 cup dark brown sugar; packed
1/2 cup cider vinegar
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 teaspoons regular or seasoned salt
1 teaspoon pepper
1 teaspoon dry mustard
1/2 cup water

Procedure
Brown beef & onions in a large skillet. Combine with other ingredients in crock pot; stir well. Cook on low for at least 8 hours or on high for 4 hours. Spoon on buns or over noodles.

Budget Meals/Quick & Easy Italian Sandwiches

Quick and Easy Italian Sandwiches
For 4 sandwiches:
Ingredients:
4 Sub buns
4 Italian sausages Sweet, mild or hot
1 cup of mozzarella cheese
1 jar of pizza quick sauce

Procedure
Preparation: Broil or grill your sausage until done. Take your buns and slice open. Like a hot dog bun. Spread somepizza quick sauce inside the bun, then lay your sausage and cover with cheese. Wrap with foil and place in oven or grill just long enough to melt cheese. Add mushrooms or whatever else suits your fancy
